2 1/4 cups all purpose flour
1 1/2 T. sugar
1/2 t. salt
1/2 c. plus 1 T. Vegetable Shortening (chilled)
5 T. butter (chilled and cut into 1/2' cubes)
1/3 c. plus 1T ice-cold water
1 large egg yolk
3/4 t. cider vinegar

In mixing bowl add flour, salt, sugar. Mix until blended, add shortening and butter. Use fork or pastry blender and mix until mixture is coarse bread crumbs. In a glass measuring cup add ice cold water, egg yolk and vinegar, mix till blended. Start adding liquids, be stingy with the water-you can always add more but its difficult to remedy a dough if it's to wet. Mix well being sure to moisten the crumbs on the bottom of the bowl. Add just enough liquid that the dough clumps together. Dough should be moist, but not wet and not crumbly. Gather up the dough and roll into a ball, wrap the ball into wax paper or plastic wrap and put in refrigerator and let chill for 30 minutes or up to two days. Take out and let sit 10 mins. Dough makes a large double pie crust or 3 single pie crust. Cut dough into 2 or 3 pieces. On a floured surface roll out dough into a circle and put in pie pan. Add your choice of filling and bake at 375º until golden brown. This pie crust freezes very well.
