Ham Gravy Recipe

whole cloves
5-6 heaping tbsp. brown sugar
1 l20 oz. can sliced pineapple (juice from can of sliced pineapple)
2 c. water

Gravy Thickening

3 c. of ham broth
½ c. flour
1 tbsp. cornstarch
½ c. water

Directions:
Directions:
Place ham on rack in shallow roasting pan, score the fat part of the ham and push whole cloves into top of ham.

Mix brown sugar with pineapple juice in bowl and pour over top of ham. Add at least two cups of water to cover the bottom of pan and avoid burning the drippings. Cover with foil and bake at 350º as prescribed for the weight of the ham, until done. I use a 350º oven while directions on the ham and other cookbooks recommend 325º. You will know/learn the best temp for your oven. Remove ham about 30 minutes before done, remove the foil and place pineapple slices on ham, using toothpicks to hold in place. Spoon some of drippings over the pineapple and return to oven. Leave the foil off. I also check throughout the cooking time and add water to insure the drippings do not burn and that you have enough to make gravy.

Remove from oven and drain drippings into saucepan to use in the gravy.

Preparing Ham Gravy

Mix flour, cornstarch, and water in a gravy shaker and shake well or whisk vigorously in a bowl, to a smooth consistency. Pour about three cups of ham drippings from pan into a large saucepan, and place on medium heat. You can add a little more water to those drippings if needed. Gradually add contents of shaker to drippings while whisking as you add it in. Add as much thickening as needed to make the gravy as thick or thin as desired. Stir constantly when adding ingredients together to avoid lumps.

Heather says the gravy is the best part of the ham. She loves it over mashed potatoes and I also like to put ham gravy on a slice of bread. Yummy! Yummy!
