6 cups of onions, sliced thin.
3 tbsp. oil
1 clove garlic chipped fine
1 can (8 oz. tomato sauce)
¾ tsp. oregano
1 tsp. salt
¼ tsp. pepper
½ lb. ground sausage meat
¼ c. chopped olives
6 oz. whole milk mozzarella

Peel onions. Cut in half from top to bottom. Lay flat on cutting board and thinly slice to measure 6 cups. In large heavy skillet, heat oil. Add onion and sauté until onion wilts down. Add garlic and sauté until garlic and onion are soft. Add tomato sauce, oregano, salt & pepper. Simmer for about 5 minutes. Add olives. Cook sausage in second skillet and drain fat when done. Slice French bread long ways and scoop out a little of the bread from the middle and set aside. Top the French bread with sauce and sausage. Cover with mozzarella cheese to taste. Broil in the oven until the cheese is melted. Serve.
