3 lbs. canned whole tomatoes
1 large onion
6 tbsp. butter
1 tbsp. dried basil
1 pint light cream
1-2 tbsp. brown sugar
5 tbsp. cognac
Salt & pepper
Chopped fresh parsley or chives or hot croutons for garnish

Directions:
Directions:
Chop the onion and saute in butter for 20 minutes until soft but not brown. Squash the tomatoes with a potato masher and add them and their liquid to the onion. Add the basil and stir. Bring to a boil, reduce heat, and simmer, covered for 30 minutes. Set aside and let cool slightly.

Puree in a food processor (or use immersion hand blender). Reheat. In a small saucepan, heat the cream with the sugar, whisking often. Pour into the tomatoes.

Heat the soup but do not boil. Add the cognac, salt, and pepper. Garnish with chopped parsley or chives or fresh hot croutons.
