3 large eggs
4 tsp vanilla
1 cup vegetable oil
2 cups white sugar
2 cups shredded fresh zucchini
2½ cups all purpose flour
2 tsp baking soda
1 tsp salt
¼ tsp baking powder

Directions:
Directions:
Using stand mixer, beat eggs until fluffy. Mix in vanilla, oil and sugar. Mix in shredded zucchini.
In a separate bowl whisk together flour, baking soda, salt and baking powder. Slowly and and mix into zucchini mixture.
Spray 2 loaf pans with cooking spray and pour into the 2 pans.
Bake in pre heated oven at 350º for 1 hour.
