Ingredients:
Ingredients:
1 c. heavy whipping cream
1 c. light whipping cream or half and half
2 c. light corn syrup
1 t. salt
2 c. sugar
½ c. butter
1½ t. vanilla(caramel) or 2½ t. anise & black food coloring (licorice)

Directions:
Directions:
Warm cream over medium heat, but do not boil. Add salt, sugar, and corn syrup. Cook on medium heat with candy thermometer. Add butter a tbsp at a time. Stir until melted then add more. Do not add butter all at once it will ruin the candy. Cook over medium heat until temperature reaches 236º. Remove from heat. Mix in flavoring and pour into a very well buttered 9 x 11 pan. Let cool. Cut with scissors and wrap with waxed paper.
* you will need a large pot to cook in- the candy bubbles up when cooking.
* temperature is key in this recipe, if cooked under 236º it will be chewy and if cooked over it will be hard.
