1 pkg. mild pork sausage
1 pkg. frozen chopped spinach
1 doz. eggs
1 pkg. of fresh mushrooms or 1 small can
1 pt. whipping cream
2 cups grated cheddar cheese

Directions:
Directions:
Preheat oven to 350º

Brown sausage and drain fat. Thaw spinach and squeeze water out. Spray a 9x13 pan and layer in sausage. Layer in spinach, then eggs (whole - not scrambled) and pop the yolks. Layer on mushrooms (drained if canned) and then the cheese. Pour in whipping cream. Bake for 30 minutes. For a firmer dish, cook at 400º.
