3T. Olive Oil
2Lb. Bone-in, skin-on Chicken thighs
Kosher Salt
Black Pepper
1Lb. Baby Red Potatoes, quartered
2T. Butter, softened
5 cloves Garlic, chopped
2T. Thyme
Parsley
2T. Parmesan

In Lg. skillet, over med/hi heat, heat 1T oil. Add chicken and season with salt and pepper and sear until golden brown. About 3 minutes per side. In Lg. crockpot toss potatoes with other 2T oil, butter, garlic, thyme, parsley and parmesan. Season generously with salt and pepper. Add chicken and cook on high for 4 hrs. or low for 8 hrs. until potatoes are tender and chicken is cooked.

Garnich with parmesan before serving.
