1-1/2 tbsp. oil
3 med potatoes, thinly sliced
1/2 cup chopped onion and green peppers
2 cups kielbasa, sliced (or ham)
3 eggs
1/2 cup shredded sharp cheese

Directions:
Directions:
Spread oil on the bottom of a 10 round baking dish. Spread half of the potatoes slices on the bottom. Top layer with chopped onion and peppers. Arrange half of the kielbasa on top. Repeat layer of vegetables and meat. Cover with foil and bake at 350 degrees until the vegetables are tender. Break eggs in bowl and beat slightly. Pour on top and recover and bake for about 10 minutes until eggs are set. Top with cheese and bake until cheese is melted.
