2 pounds of zucchini, sliced in medallions
1 1/2 c. flour
1 c. plain Panko bread crumbs
1 package of Ranch seasoning
salt and pepper to taste
Morton® Nature's Seasons to taste
3 eggs, beaten

Directions:
Directions:
In a shallow dish, mix dry ingredients together. In a separate bowl beat 3 eggs. Slice zucchini into 1/4 in. thick medallions. Dredge zucchini in egg and then the dry mix. Shallow fry in vegetable oil on medium heat until golden brown on each side. If you choose to air fry, spray each side with nonstick cooking spray and place in the air fryer for 5 minutes. Flip, spray that side and fry for an additional 5 minutes.
