Ingredients: 12 cucumbers, sliced 8 onions, sliced 4 green bell peppers, sliced 4 red bell peppers, sliced 4 tbsp salt 2 1/2 cups sugar 2 1/2 cups vinegar

Directions: |
Directions:Slice thin the cucumbers, onions and bell peppers. Place in large bowl and sprinkle salt over vegetables and let set, covered, for 2 hours. Rinse well and drain. Mix the sugar and vinegar and stir until dissolved. Place cucumbers and vegetables into quart jars using the back of large spoon to pack them in. Pour the vinegar and sugar mixture over the cucumbers, onions and peppers. Screw on lids tightly. Will keep for months in the refrigerator. May need to increase amount of vinegar and sugar mixture depending on how packed the vegetables are in each jar. |

Notes: These crunchy cucumbers are great served with cooked vegetables or on top of a hamburger or turkey sandwich. We had an abundant supply of cucumbers in our garden this summer and made over a 100 jars to share with friends and neighbors!
