Baked Zucchini Recipe

8 oz. julienned zucchini (1-3 cups)
1 cup diced yellow onion
3/4 cup mozzarella cheese
1/3 cup Ricotta cheese
1 cup marinara/spaghetti sauce
2 tsp. olive oil
1 tsp. crushed/minced garlic
1 tsp. basil
1 tsp. oregano
1/2 tsp. crushed red pepper
1/2 tsp. sea salt
1/2 tsp. coarse black peppercorn

Julienne zucchini. SautÚ onions-medium/high heat until translucent. Reduce heat to medium. Add zucchini, garlic, basil, oregano, red pepper, salt, pepper. Mix well, sautÚ until zucchini is cooked.

Stir in marinara sauce and ricotta. Mix 1/4 cup mozzarella cheese. Remove from heat. Transfer to mini casserole dishes. Top with mozzarella cheese.

Bake at 350║ for 10 minutes. Broil at 350║ for 5 minutes.
