1 medium tomato, seeded and chopped (yields about 1 cup)
1/2 cup cucumber, dice, seeded and peeled
1/4 cup chopped green pepper
2 green onions, sliced
2 tablespoons vinegar
1/4 teaspoon salt
Dash of pepper
1 small package sugar-free lemon jello
3/4 cup boiling water
1/2 cup cold water-add ice cubes to make 1 1/4 cups

Directions:

Combine veggies, vinegar, salt and pepper and set aside. Dissolve gelatin in boiling water. Add cold water and ice cubes. Stir until slightly thickened, about 5minutes. Pour into individual dishes. Chill, soft set in 30 minutes.
