1 3-5 lb chicken, whole
1 cup frozen peas
1 cup diced carrot
water
1 tsp. dried Sage
1 tsp. dried Thyme
1-2 Knorr chicken bouillon cube(s)
Salt and Pepper to taste
2½ cups Bisquick™ (I like the Heart Healthy one better as it makes lighter dumplings)
⅔ cup milk

Directions:
Directions:
1. Wash chicken, removing any gizzards or neck from inside cavity. Place in a large stockpot, pour enough water over chicken to just cover.
2. Bring to a boil, turn heat down to low and simmer until chicken falls off bone (2 hours?).
3. Remove chicken from pot and allow to cool. Bring liquid back to a boil until liquid is reduced in half.
4. Pull chicken meat off the bone and cut into bite size pieces. Add bouillon cubes to get desired chicken flavor in stock. Add spices. Add chicken back to pot along with peas and carrots. Cook for 10 minutes.
5. While veggies are cooking, combine Bisquick™ and milk until combined and sticky. Bring chicken stock to a boil. Drop Bisquick™ by spoonful's into the hot broth. Reduce heat slightly. Cook uncovered for 10 minutes. Place cover on and cook for 10 more minutes.
6. If stock is not as thick as you would like, you can stir a mixture of flour and water (a slurry) into the broth to thicken it.

This is a Quinlan family classic. I like to double the amount of Bisquick and milk so there are plenty of dumplings to go around.
