1 cup packed brown sugar (I prefer dark but light will work)
7 tbsp. vegetable oil
2 large eggs
1⅓ cups mashed ripe banana (about 2 large)
1 cup regular oats
½ cup milk
2 cups all-purpose flour
1 tbsp. baking powder
½ tsp. baking soda
½ tsp. salt
½ tsp. ground cinnamon

1. Preheat oven to 350º.
2. Combine first 3 ingredients in a large bowl; beat well at medium speed. Combine banana, oats and milk; add to sugar mixture, beating well.
3. Lightly spoon flour into dry measuring cups, level with a knife. Combine flour, baking powder, baking soda and spices in a medium bowl and stir with a whisk. Add to sugar mixture; beat until just moist.
4. Spoon mixture into a 9x5 greased loaf pan. Bake at 350º for 1 hour and 10 minutes.
5.. Cool 10 minutes in the pan on a wire rack. Remove from pan. Cool completely on the wire rack. Once cooled, it can be frozen.
