1 large onion, sliced thin
3 tbsp. olive oil
1 tbsp. curry powder
1 c. uncooked rice
1 c. lentils, simmered until tender
2 c. chicken broth
1 small bay leaf
2 hard cooked eggs, quartered
salt and pepper

Directions:
Directions:
Saute onion in olive oil, add curry powder, blend, and stir in rice until well coated with oil and onion and curry.

Put in a casserole with lentils.

Add chicken broth, bay leaf, and seasoning.

Cover and put in 350º oven 30 to 40 minutes or until the liquid is all absorbed. Arrange quarters of hard-cooked eggs on top.
