Bottom layer ingredients:

1 box yellow cake mix
1 egg (room temperature)
1 stick melted butter or margarine

Top layer ingredients:

1 8 oz. Philadelphia Cream Cheese (softened)
1 1 lb. box of powdered sugar (plus some extra for topping)
2 eggs (room temperature)
1 tsp. almond or vanilla extract

Directions:

1. Spray a 13 x 9 pan with Pam.

2. Mix together all bottom layer ingredients with a fork and then spread evenly onto the bottom of the pan.

3. Mix together all top layer ingredients with a mixer until smooth and creamy (about 2 minutes). Pour over top layer, making sure it spreads evenly.

4. Bake in preheated 350 oven for 38 42 minutes until top is golden brown.

5. Sprinkle top with the extra powdered sugar.

This recipe was shared with us by one of Nick's coworkers at Elsevier, Fran Phillips, who is famous around work for her delicious St. Louis style gooey butter cake. She also mentioned the following tips:

- Never use a glass pan for this recipe
- Always use Philadelphia cream cheese
- She prefers to use Pillsbury Plus Yellow cake mix
- The cake tastes best if you make it the day before or even two days before...cover and refrigerate overnight but be sure to server at room temperature.
