2 refrigerated prepared pie crusts—or make from scratch. This works best if you choose to do the deep dish version.

Filling:
3 Tbsp. Olive oil
2 large Vidalia onions—sliced
¾ lb ham cubed
8 large eggs
1 qt. Heavy cream
Salt & pepper, to taste

NOTE: This can be made as one deep dish quiche, in which case you will use a spring form pan and need to make the dough fit the pan. OR—you can make 2 quiche by using 8” pie plate (one pie crust per)

Heat oil, carmelize onions, add water as needed. (This is a slow process to get the carmelization just right—kinda like a roux). Add ham and cook 10 minutes. Remove from heat.

In large bowl, beat eggs, add cream and S&P.

Arrange carmelized onions and ham on bottom of crust. Carefully pour over the cream/egg mixture. Cover with foil. Bake 1 - 1½ hours. Remove foil and continue to bake another 15 minutes. NOTE: You can test to see if it is done but inserting a dinner knife into the custard — if it comes out clean, it is done.

Cool 30 minutes.
