2 T oil
1 medium chopped onion
1/2 c flour
1 t poultry seasoning
1 can 14.5 oz chicken broth
3/4 c milk
3 c cubed cooked chicken
2 c frozen mixed vegetables, thawed (10 oz or so)
1 pie crust

Directions:
Directions:
Preheat oven to 450º. Cook onion in oil until tender. Stir in flour and poultry seasoning until blended. Whisk in broth and milk. Boil, stirring constantly and cook 2-3 minutes until thickened. Stir in chicken and vegetables. Grease a 9" deep dish pie plate;add chicken mixture. Place top crust and finish edges. Cut slits in crust. Bake 15 - 20 minutes until crust is done and filling is bubbly.
