2 cups sugar
2 sticks butter, softened
4 eggs
3 cups all-purpose flour
1 teas. vanilla
1 can fruit pie filling - cherry, apple, blueberry

Directions:
Directions:
Beat sugar and butter; then add eggs one at a time. Add sifted flour - the mixture will be stiff. Spread approximately 3/4 of the batter in a greased and floured 11" x 16" cake pan. You can use a 9" x 12" pan - they will just be thicker. Cover the batter with the fruit filling, and drop teaspoons of the remaining batter on top. Bake for 45 minutes in a 350ºF oven. Let squares cool in the pan - do not cover tightly.

Isa was a great cook and baker, which was unusual for a man in his generation. He became a widower in 1958 at the age of 44 (Esko was 19 and John was 11) so cooking became a necessity, not a choice. He married Ethel in 1961 but she was a career woman with little interest or time for cooking so he continued to be the main cook in the family.
