1 tbsp olive oil
½ onion finely chopped
3 cloves garlic minced
1 med large carrot grated
1 rib celery grated
1½ cups kale shredded and tightly packed
1½ cups mushrooms thinly sliced
¼ tsp thyme
¼ tsp oregano
1 tsp salt
black pepper to taste
1 cup cooked lentils
1 cup cooked brown rice
3 tbsp ground flax seed
2 tbsp nutritional yeast
½ cup ground walnuts
¼ cup dried cranberries
⅓ cup of oat flour

Directions:
Directions:
1 cook rice and lentils
2 Prep and chop rest and keep everything small and it will hold together better.
3 preheat oven to 400 degrees
4 Heat 1 tbsp oil to med high. add onion, celery and kale garlic and carrot. saute about 2 minutes.
5. add the mushrooms oregano, thyme, salt and pepper and continue sauteing
until everything is tender.
6. In a large bowl, combine the sauted vegtable brown rice lentils oat flour flax yeast, walnuts and cranberries.
7 Mix everything thourghly.
8 Firmly press the mixture into a parchment lined loaf pan or 9 by 9 cake pan.
9 Bake 25 minutes. Glaze with cranberry glaze. Bake another 10 to 15 min.
10. Remove from oven and let sit 10 to 15 min.
