Crust:
1 cup flour
3 tbsp sugar
cup butter, softened

Filling:
3 large eggs, separated
2 cup light brown sugar
1 tsp vanilla
tsp salt
1 cup chopped pecans
cup flaked coconut

Directions:
Directions:
Heat oven to 375. Grease a 9 by 13 pan with butter. In a medium bowl, mix ingredients for crust and press into bottom of pan. Bake 12 to 14 minutes.

While the crust is baking, in a large bowl beat egg yolks, brown sugar, vanilla and salt. In a small bowl, beat the egg whites with electric mixer until foamy. Fold whites into the mixture in the large bowl. Remove partially baked crust. Spread filling evenly over crust. Reduce oven temp to 350. Bake 25 to 30 minutes or until deep golden brown and center is set.
