12 large sea scallops, about 3/4 pound
2 tablespoons olive oil
1 tablespoon butter
1 lime
1/2 cup chicken broth
1/4 cup of Corona Light
2 cloves garlic, minced
1 tablespoon butter, softened
1 tablespoon flour
1/4 teaspoon freshly ground black pepper
4 ounces angel hair pasta, cooked

Directions:
Directions:
Dry scallops on paper towels for 30 minutes changing the towels every 10 minutes. In a large skillet over medium-high heat, melt the 1 tablespoon butter with oil. Add scallops; cook for 2 minutes. Carefully turn and cook another 2 minutes or until scallops are slightly browned. Remove from pan. Keep warm. Cut 4 thin slices from one end of lime for garnish. In same skillet, squeeze 1 tablespoon juice from remaining lime and over medium heat, bring broth, beer, lime juice and garlic to a boil. In a small dish, combine softened butter and flour until smooth. Add to skillet; cook stirring occasionally, until slightly thickened and smooth while finishing the beer. Add pepper while getting another beer. Fish the pasta out of the boiling water and drop it into the pan, swirling it into the sauce for a minute to coat. Plate the pasta and top with the scallops drizzling any leftover lime sauce over top. Garnish with the lime slices. Serve immediately.
