Chocolate Cream Pie (Nana's) Recipe

Ingredients: 3 c milk 1 c sugar 4 Tablespoons cornstarch ¼ t salt ¼ c cocoa 4 eggs 3 T butter 1 t vanilla
One cooked 9" pie crust

Directions: |
Directions:Mix 1st 5 ingredients (very well) in glass Pyrex. Cook on high for 3 minutes in microwave then stir. Cook for 2 more minutes. Stir. Cook 1 more minute. Stir. Depending on thickness, continue to cook at 30 sec intervals, stirring in between, until thickened. (Mine is usually done at about 6 min.) Meanwhile, separate egg whites from eggs yolks. Temper egg yolks with hot milk mixture by adding 2 tablespoons of hot milk to egg yolks then mix egg yolks into hot mixture. Add Add butter and vanilla and mix well. Pour into cooked pie crust. Cool and top with Nana's Meringue. |

Notes: Mom uses jiffy pie crust mix now, but when we were growing up she always made them from scratch. I think the one we included is from the old Betty Crocker cookbook and is one of our favorites.
