Coconut Cream Pie Recipe

3 c milk
½ c sugar
3 ½ T cornstarch
Dash of salt if not using salted butter.
3 eggs
1 T butter
1 t vanilla
½ - ¾ c coconut (depending on taste)

Directions:

1. Mix 1st 4 ingredients (very well) in glass pyrex.
2. Cook on high for 3 minutes in microwave then stir. Cook for 2 more minutes. Stir. Cook 1 more minute. Stir. Depending on thickness, continue to cook at 30 sec intervals, stirring in between until thickened. (Mine is usually done at about 6 min.)
3. Meanwhile, separate egg whites from eggs yolks. Temper egg yolks with hot milk mixture by adding 2 tablespoons of hot milk to egg yolk.
4. Mix egg yolks into hot mixture.
5. Add butter and vanilla.
6. Add ½ - ¾ c coconut. (This is also great made with coconut milk - I use a can then add from the carton. Would also be great for banana cream pie or pudding.)

Top with mom's meringue. So delicious! One of the reasons I think mom is so generous with her cream pies is because she has perfected doing them in the microwave thus doesn't need to stand over a hot stove. So glad she passed on this secret!
