1/2 cup sun-dried tomatoes
2 cups fresh parsley
1/2 cup Parmesan cheese grated
1/4 cup pine nuts
2 tablespoons dried basil
3 cloves garlic minced
1 teaspoon salt
1/4 teaspoon pepper
3/4 cup olive oil

Directions:
Directions:
Place sun-dried tomatoes in boiling water for 5 minutes to soften. Drain well and chop. Set aside.
In food processor combine parsley, Parmesan cheese, pine nuts, basil, garlic, salt and pepper. Process until very finely minced. With food processor running gradually add oil to parsley mixture until smooth and well combined. Stir in sun-dried tomatoes. Serve with pasta and more Parmesan cheese.
