French Toast Casserole Recipe

1 large loaf white bread or cinnamon swirl bread (remove crusts - optional)
1 stick butter (or butter substitute)
1 cup light brown sugar
1 tsp. cinnamon
5 eggs (or egg beaters)
1½ cups milk (vanilla soy milk is a great choice as well)

Directions:
Directions:
Melt butter in13x9 pan. Stir in sugar and cinnamon. spread evenly over bottom of pan. Place 2 (or 3!) layers of bread on top.

Beat eggs and milk in separate bowl. Pour egg/milk mixture over top of bread, soaking all bread evenly. Cover with foil refrigerate overnight.

In morning, sprinkle cinnamon/sugar on top. Bake at 350º for 40 - 45 minutes. Serve with maple syrup or whipped cream.
