1 quart jar of store bought pasta sauce with basil (Yes, I start with this, don't judge!)
6 rolled and julienne basil leaves or 1 tbsp. dried basil
1/2 tbsp. of dried oregano
1 tbsp. chopped parsley
3/4 tbsp. garlic salt
1 tsp. pepper
1/2 cup grated Asiago cheese or more if you like
14 oz. diced can tomatoes, preferably Italian
2 small cans tomatoes paste
1/4-1/2 cup of merlot or pinot noir and a little more for the cook!
2-3 cups of water
1 med to large garlic clove minced
2 tbsp.. olive oil

Heat oil in a large pot. Sauté garlic just until golden. Add jarred sauce, paste, canned tomatoes, basil, oregano, garlic salt, pepper, parsley, cheese and water. add more water if too thick because it will cook down and get thicker. about an hour after it has been simmering add the wine. Taste to see what additional flavors it will need. Pasta sauce is always better the longer it is in the refrigerator. Keep in refrigerator a week or in the freezer 3 months. I usually make sure to make enough to have on hand and a few 1/2 cup containers to put in soups or on stuffed peppers or anything else. In my opinion pasta gravy is a staple in every kitchen.
