3 pounds Yukon Gold potatoes peeled and quartered
1/2 cup fresh squeezed lemon juice
1/3 cup olive oil
2 garlic cloves minced
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups canned chicken broth

Directions:
Directions:
Let potatoes stand in water while preparing sauce.
Combine all ingredients in gallon size ZipLoc bag and shake to combine.
Dry off potatoes and put them in the bag and let marinate for 2 hours.
Preheat oven to 400º. Put potatoes and marinate in large casserole dish. Roast for 1 hour and 10 minutes turning occasionally. There should be plenty of sauce leftover after roasting. Put under broiler for 5 minutes to crisp up if you prefer.
