4 cups peeled and sliced potatoes
2 medium onions chopped
3 cloves garlic minced
3 tablespoons butter
2 tablespoons flour
2 cups milk
2/3 cup Parmesan cheese grated
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon pepper

Directions:
Directions:
Place potatoes in bottom of large casserole dish.
Fry garlic and onions in butter. Add flour and cook 3 minutes. Add milk stirring constantly until slightly thickened. Take off heat. Add mustard, salt, pepper and cheese. Stir till cheese has melted. Pour mixture over sliced potatoes.
Cover and bake at 350 for 1 1/2 hours.
