Ingredients: 1 box white cake mix (ingredients to make cake per box instructions) 1 can cream of coconut - not coconut milk 1 can evaporated milk 1 can crushed pineapple (drained) 1 cool whip 1 small bake of sweetened coconut flakes
|

Directions: |
Directions:Make the white cake mix according to the instructions on the box. When cake is done poke holes in it while it is still warm. Pour the can of evaporated milk on the top of the cake. Stir up the cream of coconut and pour ½ of the can on top of the cake. Spread the drained crushed pineapple over the cake. Once the cake has cooled down spread the thawed cool whip on top and sprinkle the coconut on. Cover the cake and refrigerate overnight. FYI, I will make a couple of pina coladas with the pineapple juice and the rest of the cream of coconut. |

Notes: While in Pecos, Melissa made this cake for us. We all loved it so much that I have been making it ever since. Good luck keeping everyone out of it overnight.
