Directions:STERILIZE THE JARS AND LIDS:
Place all the jars in the dishwasher. Complete and clean cycle and do not open the dishwasher door until ready to fill the jars. Make sure to plan your timing so that the jars are hot when you fill them. In the meantime, put bands and lids in a medium pot and place on low along with the tongs you will be using to remove the jars from the boil bath. Everything must be sterile.
MAKE THE JAM Chop the figs coarsely, and add them to a large saucepan. Do not use an aluminum pan. Add 6 cups of sugar and toss. Cover and let stand in the refrigerator, for at least a few hours or overnight. The figs will naturally release some of their juices. Place the pot on the stove on medium low heat. Bring the figs to a boil slowly, stirring frequently to dissolve the sugar and prevent scorching on the bottom. Raise the heat and cook briskly until the jam thickens and cascades from a spatula in sheets. Do not over cook or you will end up with candy instead of jam. Add the lemon juice. At his point and the vanilla. Stir to combine, and cook another minute longer. Put jam in the jars leaving 1/2" head space. Place bands and lids on the jars. Process in a hot boiling water bath for about 5 min. Take out of the water and cool. For 20 min. Lids should pop when the jam cools. If not, put back in water. Jam does not need to be refrigerated until it has been opened. |

Notes: i use this jam in the figgy moon cookies in this book. This is addicting. Figs can be expensive so remember to can these in July. Dennis and I went to a U-Pick-Em farm and picked 12 lbs on the 4th of July. Since 2020 everyone was still pretty much locked down because of the Covid 19 virus it was one of the few things we could go do for the day. It was a beautiful day and so grateful to be healthy! Look for a farm to go pick, go to a farmers market or get them at the market. When I was a little girl my parents would bring us each a treat from the grocery store. They brought me Kadoka Figs in a can and my brother, Glenn they brought pineapple. We would be so excited for our treats.
