(Large amount-so you can cut in half)

2 large vidalia or sweet onions
1 heaping tbsp crushed garlic
1 heaping tbsp black pepper
2 envelopes Sazon
1 can tomato sauce (8oz)
2 cups parboiled long grain rice
1 tbsp salt
4 tbsp Recaito or Sofrito
1 can Goya Green Pidgeon Peas
1/4 cup oil

Add oil to pot, on high bring up to heat, reduce to medium.
Add minced onions (large mince) to pot, do not brown (Allow onions to become translucent).
Stir in Sazon, salt, pepper, garlic, Recaito or sofrito.
Add rice, stir and coat with the onion mix. Add peas/beans (drained), mix gently.
Add can of tomato sauce to large measuring cup, fill with water to 2 cups, THEN refill another 2 cups water, add to rice.
Mix briefly. It is perfectly ok if food is sticking to bottom of pot. Use a wooden spatula a stir it, reduce heat, cover and cook for 20 - 30 minutes, Stir gently, taste and add salt if it needs it.
