1-1/2 cups Graham Cracker Crumbs
2 tablespoons Sugar
4 tablespoons Melted Butter

6 Egg Yolks
1 cup Sugar
1 pound Cream Cheese, Room Temperature
6 Egg Whites

1 teaspoon Vanilla
2 tablespoons Lemon Juice
1 pint Sour Cream

Directions:
Directions:
Mix graham cracker crumbs, sugar, and melted butter. Reserve 1/4 cup crumbs for top. Pack crumbs against sides and bottom of a 9 inch spring-form plan.Whisk 6 egg yolks; beat in sugar on low speed. Beat in cream cheese, cut into cubes. Add vanilla, lemon juice and sour cream. Beat egg whites until stiff. Fold into cheese mixture.
Pour into pan and sprinkle with crumbs. Bake in a 310º F oven for 1 hour. Turn off oven and let cake stay in oven with door closed another hour. Then partially open oven door and let cake remain in oven 1 more hour.
