"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
1/2 cup honey
2 egg whites, room temperature
1/4 tsp salt
1/2 tsp. vanilla

Directions:
Directions:
Heat the honey in a medium sauce pan for 5 to 10 minutes, until bubbly and dark amber colored.

Place two egg whites in a clean bowl and add salt. Gently start to mix the egg whites on low( we use a stand mixer) while the honey is heating up.

After the egg whites start to get frothy, turn the mixer up to medium and slowly drizzle the hot honey in. Carefully, add the honey in a steady stream over a minute. Once all the honey is added, turn the mixer up to high and let the mixture go until fluffy and thick. This will take 5 to 6 minutes. Add the vanilla and let mix for one more minute.

Frost cupcakes or cake with frosting.
