2 T. Butter
1 to 2 T. Minced Onion
3 T. Flour
1 to 2 t. Sugar
1 t. Salt
1/4 t. Pepper
2 c. Tomato Juice (may puree whole tomatoes and add water to 2 cups)
2 c. Milk

Directions:
Directions:
In a 2 quart saucepan, melt butter and add onion. Cook onion until soft. Stir in flour, salt, pepper and sugar. Remove from heat and gradually whisk in tomato juice until smooth. Return to moderate heat and cook until thickened and boiling, about 2-3 minutes. Gradually whisk in milk. Heat to hot but not boiling.
