1 1/2 TBSP cornstarch
2/3 C whole milk
3 TBSP butter
1 lemon juiced plus zest
2 egg yolks
1/4 tsp salt

Directions:

Mix milk and cornstarch.
Whisk over medium heat until thickened- do NOT walk away--stir baby, stir
Add butter
Add lemon juice and zest and salt SLOWLY
on low whisk in egg yolk

I think I got the basics of this recipe from a 1980s Cooking Light magazine.

Used it for 20+ years.

We have eggs benedict every other Sunday with mimosas.

There are only 2 of us in our home, so not much is left over. I usually save the 1/4 C leftover with plans to use it in something else....then I toss it mid-week.

Try the other recipe that I adapted from "Allrecipes" if you are in a hurry. I've made it twice and it only takes 2 minutes and there is enough leftover for another use.
