Broccoli Cashew Chicken Recipe

2 boneless skinless organic or pastured chicken breast, cubed
2 tbsp. avocado oil
1 inch chunk ginger,, grated or finely minced
5 fresh garlic cloves, finely minced
1/2 tsp. Celtic sea salt
1 c. roasted cashews
2 c. broccoli florets
1/2 c. chicken broth
1/4 c. coconut aminos
2 tbsp. honey

Add healthy fat of choice to a pan over medium-high heat.

Add the garlic and ginger, stirring occasionally for 1 minute.

Add the chicken and season with sea salt, stirring occasionally for 3-4 minutes until there is no more pink in the chicken.

Add the cashews and broccoli, stirring occasionally for 1 minute.

Add the broth, coconut aminos and honey, stirring occasionally for 9 minutes until the sauce has slightly thickened and the broccoli is tender.

Remove from heat and allow to rest for a couple of minutes, then serve immediately.
