1 LARGE BOX OF JELLO VANILLA PUDDING MIX (COOKED, NOT INSTANT)

1 C. COCONUT

MERINGUE OR COOL WHIP FOR TOPPING

1 PIE SHELL

Directions:
Directions:
COOK AND MIX PUDDING ACCORDING TO DIRECTIONS ON THE BOX USING SLIGHTLY LESS MILK THAN THE BOX CALLS FOR. COOL.

BAKE PIE SHELL UNTIL LIGHT BROWN.

ADD COCONUT TO THE PUDDING, RESERVING SOME TO SPRINKLE ON TOP.

TOPPING:

OPTION #1: SPREAD MERINGUE AND COCONUT OVER THE PUDDING AND BAKE UNTIL LIGHT BROWN.

OPTION #2: SPREAD COOL WHIP OR WHIPPED CREAM OVER THE TOP OF THE PUDDING. SPRINKLE THE TOP WITH COCONUT. THE COCONUT CAN BE TOASTED IN THE OVEN FOR A FEW MINUTES.
