1 C. SUGAR
1/2 C. FLOUR
1/4 TSP. SALT

3 C. MILK

3 EGG YOLKS, SLIGHTLY BEATEN

2 T. BUTTER

1 TSP. VANILLA

1 C. COCONUT

MERINGUE:EGG WHITES AND 1 TSP. SUGAR

1 PIE SHELL, BAKED

MIX SUGAR, FLOUR,AND SALT IN THE TOP OF A DOUBLE BOILER. STIR IN MILK. COOK 15 MINUTES OVER HOT WATER, STIRING CONSTANTLY UNTIL THICK. ADD EGG YOLKS AND COOK 3 MINUTES. ADD BUTTER. COOL. ADD VANILLA AND 1/2 C. OF THE COCONUT. POUR PUDDING INTO BAKED PIE SHELL.

MERINGUE: WHIP THE EGG WHITES UNTIL FORTHY AND PEAKING. ADD A TSP. OF SUGAR AND MIX INTO THE EGG WHITES. SPREAD THE MERINGUE ON THE PUDDING AND BAKE 350º UNTIL LIGHT BROWN.
