Ingredients: 1½ lb ground beef or chuck ¾ cup regular rice 1 onion- sliced 1 green pepper- sliced 1 large can of tomato juice lemon juice Seasoning: salt, pepper and chili powder

Directions: |
Directions:Preheat oven to 350º. In large mixing bowl combine uncooked ground beef, uncooked rice and spices ( salt, pepper and chili powder). Form into medium size balls ( a little bit bigger than a golf ball). Place single layered in a baking dish ( will need cover). Place some onion rings and green pepper strips on meatballs. Pour tomato juice over meatballs almost covering them. Sprinkle with salt, pepper and chili powder. Cook for about 90 minutes or until rice is cooked. ( rice will protrude meat balls, when rice is cooked; hence porcupines). Before serving sprinkle with lemon juice. |

Notes: The above recipe makes 12 meatballs.
You can cook on stove in covered frying pan over low heat, about same cooking time as oven.
Also you can place meatball inside a green pepper (stuffed pepper). Cooking method still the same.
