1/2 cups soft butter
1 cup sugar
1/2 cup orange juice
1 egg, beaten
zest from one orange

Pinch salt
3/4 cup flour
6 teas. melted butter
3 large eggs, beaten
3/4 cup plus 3 tbsp. whole milk

MAKE THE ORANGE SAUCE:
Combine all the ingredients in a small saucepan. cook over moderate heat just until it comes to a boil stirring constantly.

MAKE THE CREPES:
Or buy them pre-make. Keep them warm with wax paper between them. If you can get the kids to wait for everyone to have some at the same time! Otherwise, serve them as you go! Make sure you have preheated the crepe pan or omelet pan(curved up on the sides.) spray with cooking spray each time you put new batter in the pan. Only put about a 1/3 cup of batter per crepe in the pan. Roll it round the pan to cover. When the batter looks almost dry take a spatula or wooden crepe spatula and flip the crepe. Brown the other side slightly. Remove from pan and put in a warming container like a clay toritlla warmer. Repeat process.
When ready to serve, fold each crepe in thirds. Ladle sauce on top with a dollup of butter and sour cream if desired.

When Matt was 12 years old and come for the weekends he would ask me to make these for him. He could eat 6. Then as the grandchildren started to come and spend the night. This was one ot their favorite breakfasts.

My favorite memory is of Hailey seating at the breakfast counter in the kitchen with her fingers set like a steeple. Saying "I'm ready!" she can eat 4-5 at one sitting. everything in Hailey's life is an event! Just the cutest!
