1 c. chopped walnuts (optional)
1⅔ c. flour
c. brown sugar
1 c. sugar
2 c. pumpkin (fresh or from can)
2 eggs
⅓ c. warm water
tsp. vanilla
1 tsp. baking soda
2 tsp. nutmeg
2 tsp. cinnamon

Preheat oven to 350F. Dissolve the baking soda in the warm water. Combine all the dry ingredients (except walnuts). Add the eggs, pumpkin, vanilla, and warm water. Mix well. Fold in the walnuts just enough to combine. Pour into a greased loaf pan.. Bake for 60 minutes or until knife inserted into the bread comes out clean.
