2 cups all purpose flour
1 cup sugar
½ teaspoon baking soda
1½ teaspoon baking powder
1 teaspoon shortening
¾ cup orange juice
2 eggs, lightly beaten
1 cup fresh cranberries, cut in half
¾ cup chopped walnuts (optional)

Directions:
Directions:
1. Preheat oven to 325º.

2. Mix juice, shortening and eggs; add sugar and mix well. Sift flour, baking soda, baking powder and salt; gradually add to the orange juice mixture and mix well. Stir in cranberries and nuts.

3. Pour into a greased loaf pan and bake for 1 hour, or until a toothpick inserted comes out clean.

4. Cool in the pan for 10 minutes; remove from pan and cool completely before slicing.

Personal Notes:
I line the bottom and the ends of the loaf pan with parchment paper. It makes removing the bread from the loaf pan much easier and keeps the bottom from sticking.
