3 to 4 lbs small red potatoes
½ lb bacon
1 medium onion diced
1½ cups celery diced
1 cup parsley chopped (optional)
1½ cups sugar, plus 1 tsp
1½ cups vinegar

¼ cup corn starch

Directions:
Directions:
Cook potatoes until done. Peel and dice. While potatoes are cooking, dice onion and sprinkle with 1 tsp sugar.

Dice bacon and fry. Pour the bacon drippings over cold diced potatoes.

In saucepan, combine sugar, vinegar and 3 cups water. Add salt and pepper to taste. Bring to boil. Dissolve corn starch in ¼ cup water and stir into boiling mixture to thicken.

Add celery, onions, parsley (if using)and bacon to potatoes and add sauce. Stir to combine and heat in slow cooker.
