6 split chicken breasts
5 cups ground bread crumbs
2 cups chopped pecans
½ cup chopped celery
½ cup chopped carrot
½ cup onion
⅓ cup chicken broth
2 tbsp poultry seasoning
½ tsp celery seed
½ tsp black pepper
½ tsp salt
⅓ cup melted butter
⅓ cup lemon juice

Mix all ingredients with hands. Mixture will be quite dry.

Spray 9x13 pan with cooking spray and divide stuffing into 6 mounds.

Place chicken breast over mounds to cover. Combine butter and lemon juice and baste breasts. Sprinkle with paprika.

Cover with foil and bake at 350 º for 25 minutes. Remove foil and bake for an additional 10 minutes uncovered.

Mom used breasts with skin and probably bones because boneless breasts were most likely unavailable at the time. I do not ever remember having this dish at home. Do you?
