1 pound ground beef
1/2 cup instant white rice
1 small onion chopped fine
salt and pepper to taste
ketchup to hold mixture together
1 jar of tomato sauce
mozzarella cheese

Directions:
Directions:
chop onion into fine pieces, add to bowl with the chopped meat, salt and pepper, rice and ketchup, mix all tingredients together then roll mixture into walnut sized balls and place in a large baking pan. after all meatballs are done cover them with tomato sauce and mozarella cheese. cover pan with aluminum foil and bake in 350 degree oven for 1 hour. Take foil off the top and bake to brown the cheese slightly.

This is a great recipe. When you invite friends over they ask where did you get porcupine meat.. the rice is supposed to represent the quils of a porcupine.
