1 Rotisserie chicken, shredded
12 oz frozen mirepoix vegetable blend (diced celery, onion, carrot) or make your own*
3 TBSP butter
3 TBSP flour
4 C low salt chicken broth; canned or homemade

Dumplings:
1 C flour
2 tsp baking powder
salt to taste (or omit)
buttermilk as needed (all visual-see directions)
1/2 tsp dried thyme (optional)--thyme can get strong, so be careful

Melt butter in a Dutch oven or other large pot and sauté mirepoix until softened. Blend in flour and cook 2 minutes, stirring frequently.

Add chicken broth to flour mixture gradually and cook, stirring frequently until slightly thickened and smooth. Season with salt and pepper to taste. Add chicken and heat until bubbling.

In a bowl: Combine flour, baking powder, thyme in a bowl and add enough buttermilk to form a soft dough. Drop by spoonfuls into chicken mixture and GENTLYspoon liquid over dumplings. Cover and cook 15 minutes. DO NOT STIR!

This is great on a cool fall or winter night. It's a one dish meal or serve with a salad.

*Frozen mirepoix mix was available at our Smiths/Kroger but we haven't seen it lately. Google it to make your own. A simple recipe is 1 medium onion, two celery ribs and 2 carrots all chopped medium dice. (Be aware that if you substitute a bag of regular frozen vegetables there are often lima beans, corn, and green beans in the mix. That seems more appropriate for chicken-a-la-king.)
