Ingredients: 1½ c all-purpose flour 1 tsp baking powder ¼ tsp salt 1 c firmly packed light brown sugar ¾ c(1½ sticks) butter, softened 2 large eggs 1 tsp vanilla extract 1 ½ c rolled or quick-cooking oats (I used quick-cooking) 1 c. raisins

Directions:Preheat oven to 350º. Grease 3 baking sheets. Combine the flour, baking powder and salt in a medium bowl. Place the brown sugar and butter in a large bowl. Beat with an electric mixer set on high speed until light and fluffy. Beat in the eggs and vanilla until smooth. Gradually stir in the flour mixture with a wooden spoon until thoroughly combined. Stir in the oats and raisins until blended. Drop the dough by rounded spoonfuls 1½ inches apart(I measured with a ruler and did exactly that; they looked really close but they hardly spread so there was no problem having them 1½ inches apart) on the prepared baking sheets. Flatten the dough slightly with a fork(I didn't do this). Bake until golden brown, about 12 minutes. Cool on the baking sheets for 2 minutes, then transfer to wire racks. Serve warm or at room temperature. |
