1-4 lb. chicken
2 T. paprika
Kosher salt and pepper to taste
1 t. sage

Preheat the oven to 450 F.
Line a baking sheet with parchment paper for easy clean-up.

Pat the chicken completely dry. Using a pair of kitchen shears, cut out the back bone by cutting down each side of it to remove. Turn the chicken over and lay it out flat on the cutting board. Using both hands, press down firmly on the chicken breast to break the breast bone and flatten the chicken as best you can. Tuck the wing tips behind the wings.

Place chicken skin side up on baking sheet and bake for about 45 minutes. Chicken should be 160 F. Let rest for about 10 minutes and slice.

I usually add carrot and potatoes for a one pan meal. You can also change up the seasonings as you like.
